Default Temperature Gauge Yo-Yo

I'm new here. 2006 Dakota 3.7L v6. Temperature gauge is acting up. When I know the engine is warm, the gauge will indicate cold. Then it will jump to normal, then back to cold, then to normal, then cold, etc. After a while it operates normally. It seems to run just fine. No CEL codes are thrown. Any ideas?

Is there some secret to disconnecting the coolant temp. sensor? I can't seem to get the wires off the sensor.

Nevermind, I got a new wiring pigtail and just cut the old one loose. Replaced the sensor and now it all seems groovy.
