Took our '05 SLT 3.7 V6 with 160K miles to the shop to address an oil leak. A new oil pan gasket later and guess what, still losing oil. Assuming that it is burning the oil, since it isn't on the driveway, how do you diagnose that? I always thought that when you burned oil, the thing would smoke and this one doesn't at least not visibly. This one takes about three quarts in between changes.

Thanks for your help

Some oil usage can be normal, especially for higher mileage engines. This can be as much as a qt in 1500 miles. However, if you suspect abnormal oil usage, you could pull out a spark plug and read it. The plugs can tell you if you're burning oil. Other things to consider, use a high mileage oil, it won't stop oil consumption, but it can slow it down.
