My ac was not working so we looked for leaks and found one at the drier, so we replaced the drier, plus I replaced the txv valve just in case. The drier again had a leak before the drier and we could never get it to seal. I just ordered a new drier and a new set of hoses from the compressor to the condenser and it has the line that goes to the drier.

My main question is this: the other driers came with these small metal gaskets that in-between the drier and the connecting hoses/pipes. The new drier did not come with these. So do I need to use the old gaskets, buy new ones, or not use them all together?

If you want it to seal, yes, use the gaskets.

Also, I had severe fits until I replaced the hoses and swapped to a different brand of receiver/dryer; the Four Seasons and GPDs just plain leaked.

I just contacted Rockauto about the missing gaskets. Even in the description of the item it said gaskets were included. I think my problem was the gaskets as well and did not want to re-use them.
