The HO version did not come out until 2002. And in 02-03 all models switched the engine control computer system (PCM) from JTEC to NGC, which incorporated a different tone wheel on the crankshaft for the crankshaft position sensor. Your 2000 Dakota used a JTEC system, and you DON'T want to get an engine that is set up for the NGC system.
So your answer is to look for an engine older than a 2002 model. The 4.7L was used in the Jeep Grand Cherokee starting in 1999, in the Dakota starting in 2000, in the Durango starting in 2000, and in the Ram 1500 starting in 2002. If you're looking at a 2002 engine in any of these models, check the PCM on that particular vehicle. If it has three connectors, it's a JTEC version and will work. If it has 4 connectors, it's an NGC version and will not work with your Dakota unless you change the entire electrical control system.
To change the engine itself from NGC to JTEC, or vice versa, requires complete disassembly to remove the crankshaft and replace the tone wheel, as well as changing the tone ring on the right camshaft gear for the camshaft position sensor.
